This is my go-to recipe when I want something fancy but still quick & easy

I play an episode of Friends or Modern Family on my iPad and chop all the veggies while enjoying a few giggles. Then stir-fry everything on high flame and my vegan, healthy, delicious meal is ready even before the episode ends. Voila!

The recipe also helps clear the fridge as it can be made with leftover rice and some usually-in-the-fridge kind of veggies. If you’re looking for a nice weeknight dinner idea, look no more. Pair it with a glass of wine and your date night dinner is ready. Take your pick!

Thai Pineapple Fried Rice

Ingredients

  • 1 cup or 200 gms cooked rice (long-grain brown rice or jasmine rice)
  • Finely chopped veggies: 2-3 spring onions, 1/4 each of mixed bell peppers, 6 french beans, 4 button mushrooms, 2-3 broccolini stems, 1 small carrot, 1/2 small onion
  • 3 garlic cloves, minced 
  • 1/4 cup pineapple, diced (about half of a small, fresh pineapple)
  • 1/4 cup dry roasted cashews, halved
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon chilli sauce 
  • Salt to taste
  • Optional garnish: dry roasted cashews, spring onions

Directions

  1. In a pan, heat sesame oil and garlic. Add bell peppers, carrots, beans, broccolini, and stir-fry on high flame for 2-3 minutes. Now, add spring onion, mushroom, and onion and stir for another couple of minutes. 
  2. Add salt, soy sauce, chilli sauce, vinegar and cook for a minute. Add rice and mix everything well. Check the seasoning. 
  3. Add pineapple, cashews and mix well. Cook for a couple of minutes and remove from gas.
  4. Transfer into serving bowls or hollowed pineapple, garnish, and serve hot!

Tips: 

  • If possible, use left-over rice or cook them a day in advance.
  • If you will use fresh rice, then cook them at least an hour before stir-frying them. 
  • This is a stir-on-high-flame recipe so that the veggies remain crunchy and nothing is over-cooked.
