Sweet Strawberry Summer Salad

Sea. Sun. Strawberries. This is what summer looks like in Barcelona!

In these uncertain times (with virus variants and waves hovering over us), I’ve become really good friends with the small joys of life. Trust me, a bowl of sweet strawberries never tasted better! Even though I’ve always appreciated and felt grateful for everything I have, I’m still learning the art of being present in the moment and living it fully. 

This bowl of light, fresh, healthy, vegan strawberry sweetness feels like a good start to get into the summer spirit. It takes no more than 20 mins to make it and less than 10 to finish!

Sweet Strawberry Summer Salad

Ingredients

  • 1/2 cup ripe strawberries, washed, hulled & sliced (for the salad)
  • 1/2 cup sliced almonds, toasted 
  • 1.5 cups of arugula salad leaves, washed & dried 
  • 1 cup ripe strawberries, washed, hulled & halved (for the dressing)
  • 3 tablespoon extra virgin olive oil
  • 2 tablespoon white balsamic vinegar
  • 1 teaspoon dijon mustard
  • Optional: 8-10 raspberries
  • Optional: 1/4 tsp Kosher Salt

Directions

  1. To make the dressing, add strawberries, oil, vinegar, mustard, and salt into a blender and blend into a smooth paste. 
  2. In a bowl, add arugula, strawberries and sprinkle half the almonds. Add half the dressing and coat gently using salad spoons. Drizzle the rest of the dressing on top or keep it on the side. Sprinkle the rest of the almonds and dig into a bowl of sweet strawberry goodness!

Tips: 

  • You can use a mix of arugula and baby spinach leaves as your salad base.
  • If you like some cheese in your salad, then you can add some mozzarella pearls or parmesan shavings.
