Oatmeal comes in all shapes and sizes these days. Bake it, mug cake it, soak it overnight or make it instantly. Depending on your mood and the time you have, you can relish a version you like!

The nip in the air calls for some warm and comforting breakfast, a light blanket, and a lovely book (I’m currently enjoying my recently received gift- Food as Medicine) so I’m going with this instant bowl of goodness. Sweet Cinnamon Oatmeal

Ingredients

  • 1 cup rolled oats
  • 1/2 cup water
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • A pinch of salt
  • Optional toppings: fruits, seeds, and nuts

Directions

  1. In a saucepan, combine all the ingredients except maple syrup. Cook on medium flame, and bring to a boil. 
  2. Turn the flame to low, and simmer for 3-4 minutes. Keep stirring from time to time until you reach the desired consistency. I like it not too thick or too flowy, somewhat like a thick soup. 
  3. Once cooked, transfer to a serving bowl and let it rest for 3-4 minutes. Add maple syrup, and mix well. Garnish with your fav toppings and enjoy! 

Tips: 

  • Stir at regular intervals so that the oatmeal doesn’t stick to the bottom of the pan or become lumpy. 
  • Please adjust consistency (add more milk), and sweetness (add more honey) as per your liking. 
  • For a non-vegan version, use dairy milk and honey. For a gluten-free version, use gluten-free oats.
