Mediterranean Watermelon Cucumber Salad

Ingredients
- Base
- 1/2 watermelon, peeled and cubed
- 1 big cucumber, halved lengthwise and sliced
- 15-20 cubes of feta cheese
- A handful of mint leaves, torn by hand
- A handful of basil leaves, torn by hand
- Optional: walnuts, finely chopped
- Vinaigrette
- 2 tablespoons honey
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- A pinch of salt
Directions
- In a small bowl, whisk together the vinaigrette ingredients and keep them aside.
- In a large bowl, add watermelon, cucumber, and fresh herbs. Add the vinaigrette and gently toss to coat the dressing evenly.
- Top the salad with feta cheese, walnuts, and serve right away or refrigerate for 30 minutes for some extra coolness!
Tips:
- Pick a watermelon that’s dull-looking and not very shiny. The shine indicates that it’s not very ripe yet.
- For a Greek-style salad, add half a red onion (thinly sliced) and seedless kalamata olives in the base salad. Skip honey in the vinaigrette.
- To make a vegan version, use dairy-free feta cheese or skip it completely. Instead of honey, use maple syrup.
