Spanish summer is known for the sun and the sea but I’d also like to include tomatoes. Oh, the summer tomato bonanza!

We get them in so many colours (green, yellow, orange, different shades of red), shapes (flower, oval, rounds), and sizes (small, medium, large, cherry or pumpkin) that supermarkets have rows full of tomatoes flaunting their collection. It is like a mini tomatina festival going on there! 

Each variety has its unique flavour and is used for a specific preparation. Rich in vitamin K, vitamin C, potassium, and folate, tomatoes help reduce the risk of heart disease and cancer so there’s all the more reason to enjoy them!

Barcelona has already seen some fall days, so I’m making most of the summer produce before it’s all gone from the shelves. I have a kitchen full of melons, mangoes, strawberries, peaches, and of course juicy, colourful tomatoes! 

This toast was an easy choice considering the weekday morning rush and making a quick, easy, and healthy breakfast. All you need is 15 minutes, fresh bread, some lovely summer tomatoes, an avocado, and you’ll be done! Enjoy your toast with a cup of coffee or your favourite shake and you will be sorted until noon. Tomatina Toast Tuesday

Ingredients

  • 4 sourdough bread slices
  • 1 ripe avocado, peeled, deseeded, and mashed
  • 10-12 mixed cherry tomatoes, quartered
  • Some fresh basil leaves, torn by hand
  • Fresh juice of 1 lemon
  • 2 tablespoon butter (or vegan butter)
  • 1 tablespoon olive oil
  • 2 teaspoon rock salt
  • Optional: 1 small green chilli, finely chopped
  • Optional garnish: hemp hearts

Directions

  1. In a bowl, add mashed avocado, lemon juice, green chilli, and 1 teaspoon salt. Mix everything well.
  2. In another bowl, add cherry tomatoes, olive oil, basil, and 1 teaspoon salt. Mix gently and combine everything well.
  3. In a toaster, add sourdough slices and toast until lightly golden. Spread 1/2 a tablespoon of butter on each bread slice.
  4. Now evenly spread the avocado mash on each slice. Top it with colourful cherry tomatoes, garnish with hemp hearts, and serve right away!

Tips: 

  • To make a vegan version, do not butter the toasts or use vegan butter.
  • To make a gluten-free version, use gluten-free bread.
  • You can use a skillet to make the toast. Butter them on each side and toast on medium-low flame until lightly golden on each side.
