I’m naturally drawn towards colourful food. I enjoy arranging colours on my plate too. So, when I saw this gorgeous pink odd-looking fruit in the grocery store for the first time, I had to buy it!
Pink Pitaya or Dragon Fruit belongs to the cacti family. After gazing at its beauty for some time, I eventually cut it and was surprised to see that it was not pink from inside. I think because of the name and skin, I assumed that the fruit would be pink too but the variant I got, looked like a gray coloured kiwi and tasted like a mix of melon and kiwi.
I thoroughly enjoyed experimenting with it and to get that lush pink colour, I blended the skin in the smoothie. I hope you enjoy this exotic, vegan, healthy, smoothie too! Have a happy weekend!

Ingredients
- 1 dragon fruit, cut & frozen
- 1 ripe banana, peeled, sliced & frozen
- 1/2 cup raspberries, frozen
- 3/4 cup unsweetened almond milk
- The skin of dragon fruit washed thoroughly, cut in chunks OR 1 tablespoon pink pitaya powder
- Toppings: sliced almonds, kiwi, puffed quinoa and oats
- Optional: 1 tablespoon maple syrup
Directions
- Add all ingredients to a blender and blend until smooth. Pour in a bowl, add your favorite toppings and enjoy!
Tips:
- This is a vegan smoothie. Ayurveda also suggests that we should not mix dairy and fresh fruits. However, to make a non-vegan version, you can use dairy milk and honey.
- Add toppings of your choice: fruits, nuts, seeds, muesli, or granola.
- Recipe time does not include freezing time. Please remember to freeze the fruits in advance.
